I know i have been slacking

However I get this recipe request often:


White Rice and Pink or Red beans


Beans
1 1/4 of diced ham 1 pound pink beans (dried) or 1 can of goya pink or red beans

8 cups water

2 teaspoons salt

1 (8-oz) can tomato sauce

1/4 cup sofrito (you will find this in the freezer its white and blue small bowl) 1/2 pound calabaza (West Indian pumpkin) (cleaned, seeded, chopped

3 cloves minced of garlic

1/4 cup of chopped cilantro

A pinch of oregan

1 packet of Sazon

1 packet of Sazon with annato

Soak the beans per package directions over night.
Drain the beans. Place the beans and the rest of the ingredients in a large pot.
Bring the beans to a boil over high heat then lower to medium heat.
Cook over medium heat for 1 1/2 hours. Stir occasionally to avoid sticking. The beans should be soft. If not, cook a little longer.
If the beans become too thick you may add about 1/4 cup of water at a time to thin them out.
Add sofrito, ham, pumkin, minced garlic, oregano, cilantro, sofrito, both sazon and let simmer for about 15 min

Ingredients:
4 cups water
2 cup medium grain rice
pinch of salt to taste
1/2 cup of canola or vegetable oil
Preparation:
1. Bring the two cups of water to boil in a sauce pan.
2. Add the rice oil and salt.
3. Allow to boil for about 1 minute. Stir once to prevent sticking. Or until water has evaporized.. Turn and cover. Check rice occasionally for tenderness


There you go..

Tv and twitter is Rotting our brains....

So for the past few weeks I have been watching TV more often and have realized that TV is definately rotting our brains... I have watched a berade of crap of so called reality TV that I feel that I have to blog about it:

Here is the list of Shows that I have watched and what I think about them:

Housewives of New Jersey: C'mon althought to be honest this is my guilty pleasure... Show us the real housewives of New Jersey or anywhere.. You know the ones like you and me that have to work and grocery shop and that dont look like they are the hottest thing on the planet at 6:04am.. Although some of them dont really look that good without botox and make up.. This one for me was the best season yet!! lol


Brook Knows best: Are you fucking kidding me.?.. I caught one episode where we go over yet once again of hulk hogan and his wife linda's split... Linda you are way to old for that kid and you better stop.. the sad part you kind of remind me of that old lady from the movie There is something about Mary all way to tanned and wrinkled... Then that was followed by a little experiment that Brook and her "roomies" decided to do which was go on a date with someone from the same sex... due to the fact that her male gay roommate had problems with all the losers he dates so why dont you go out with a girl instead... Hey brooke he is Gay and going out with a Chick is not going to make it better... Remember that.. Brooke makes out with a guy I mean girl that looks like he/she is 14.. whatever this is pure menucia.. I changed it to the Golden Girls after that..they never let me down..





Hitched or Ditched: This was so stupid... enough said



Jon and Kate plus 8: Now she gets in trouble for spanking her kids... some kids deserve a damn ass whoppping.... let these people has out their issues people.. btw she looks awesome in a bikini!!

Im a celebrity get me out of here!!: hahahaha speidi sucks... they are the most ridiculous pair of idiots I have ever seen...


Tori and dean: who gives a rats ass! Obviously somebody does because that show is still on..


Denise Richards.. its complicated: lol at this one... I kind of like her but her friends are idiots..


and all of those road rules/ real world competitions: enough already washed out reality show idiots that refuse to leave the tv!


Daisy of Love: Your ugly and I am surprised that most guys find you attractive.. it has got to be the boobs. I hope you get yourself checked out for herpes after the show..

Twitter my newest addiction.. why do I feel compelled to check it every 5 minutes if its not from home its from the blackberry...same as facebook for some reason I need to post mindless tidbits of my day and have to have my peers read it for whatever reason from what i am cooking that evening or how bored I am lets not forget the need to answer mindless crap to others...Oh and lets not forget the need to play vampires, cities and the tons of quizzes that you and your friends insists on taking.. we are in the era of the now.. technology at its best for now.. love it!

Anywho, Lord knows what is in store for the future but this is all I got..

Go tell it on the mountain...

Today as I stated before was definately a day of reflection..

As I sat in church for what was to me our regular mass we had a visitor at our church helping our normal priest over the service, his name is Father Beiting at first when you see him you see this almost frail man as he followed father brown with difficulty walking and as the initial blessings took place he stood at the right of our priest.. little did i know that this little frail man would have a message that would resonate in me probably for the rest of our life. As he was introduced to the congregation father brown said he was a missionary priest from Kentucky that was visiting us from the mountains of appalachia. I thought to myself where is this place he speaks of however i intently listened as he continued on with the readings and such. After the 3rd reading from scripture father beiting stood up and spoke of his mission not before thanking the congregation for our hospitality (although i didnt even know he was here I was happy that our congregation made him feel welcomed). Father Beiting spoke of the Apalachia mountiains that are in Kentucky and how this place is the most empoverished are of the U.S.A. I dont even think that this type of poverty even existed anymore.. How ignorant and sad I felt he told stories of his missions and some of people he helped how death lurks in he shadows of the mountain. He told stories of rescue and how these people are forgotten.. How that knot in my throat just stayed with me throughout his message... I began thinking to myself how blessed I was that most of my problems were so trivial here we are worried about stupid things like home decor and weight loss or what have you, when some people need to worry about where the next meal is coming from. I dont know maybe I was naive to think that this no longer existed but I hope in the 60 years that this priest has been working this mission that he continues to be blessed and until his last breath he continues to help these people.. I have found a outlet.. I was on thenest and found a chat message board of woman that are going through the same thing I am.. Yay! At least I dont feel like a freak of nature anymore...

Endometrial Hyperplasia

That is what I got from the woman to woman website btw that is my latest diagnosis says that it can be reversable and that after a few months and some weight loss I will be ok.. As well as be able to conceive.. OMG I never that trying to concieve would be so difficult and yet frustrating.. I have decided that with the help of God and the support of my friends and family not to mention following docs orders I should finally be normal or at least have a normal monthly!! Its amazing how I love being a woman and at the same time dispise my body.. Is that weird?

This weekend..interesting thus far.

I have to say that this weekend has been awesome..

I got to see some family, got to add a member to our family.. Miss Chloe K Yarbrough pure diva when I saw her I knew she was going to be part of our family forever..

I was able to go bowling with my family today that was exceptionally fun.. Its always nice to hang out with my brother and sister along with the kids that was a real treat!

Today the entertainment community has suffered a great loss I speak of Bea Arthur mostly known for characters in the 70's comedy Maude as well as my personal favorite the Golden Girls, I was truly upset over this loss.. Im sure that her life will be remembered for many years to come.. RIP Bea Arther... Say Hi to Sophia for us Dorothy!

The other night I was watching Larry King Live of course the fact that Dane Cook was on the show didnt encourage me to watch..hahahaha However I did find that both the interviews with Beyonce as well as with Dane were awckward for me.. And why do their heads on this show look gigantic? I dunno just wondering.

What else... Oh yea the long awaited Speidi wedding.. Im not sure who was waiting in complete anticipation for this however my twitter was bombarded by notes between heidi and spencer all friggin day long as well as Perez and Heidi.. Congrats to the both of you Im pretty sure that you deserve eachother. (not that they are going to read this)...

I will this week begin charting my workouts and dieting.. And will be sharing some experiences regarding some past diet fads that I attempted and I want to touch a little on some experiences with some friends gains and even some losses..

the beginning of the new me...

As i have begun this whole new me process I have felt the need to start fresh in all my aspects from the physical me and the exterior meaning my surroundings.. I know this may sound strange and I even feel like I am sort of having a mid 30's crisis.. I guess I can be a little strange, alot sarcastic and I don't know.. The thing is I know I needed a change in my life and so there it goes and like I have mentioned before this blog is my attempt to express my opinion of the different aspects of my life not to mention the journey of losing weight and quitting smoking (not a easy task) I am attempting to quit my 2 biggest vices.. smoking and publix icing now that they sell by itself in the bakery.. What kind of crap is that? Bastards I cant beleive they are doing this to me. However that right there will be my truest challenge.. I am going to have to stop going to publix or something... ok I digress today is 2 days where i will begin a weightloss program called transformations.. Im excited, scared of failure (since I have tried everything else including Alli) but I am commited the best part is that my husband is doing it with me as well as my best friend jessica! Why did I not do this befor? Why did i have to wait until it got this far..? I dont know but its like I didnt even realize the weight getting here. I have a great support group.. my family, friends but the best ones are my mom and my daughter the best cheerleaders in the world! The only thing i know is that the alternative is not pretty and I just want my little girl to grow up and be proud of her mommy!

A Simpler time

So I was sitting around here thinking about where i have been in the past 33 years of my life....
I began getting flashbacks of simpler times when it was Mary, Nando and I running around the summer in NYC with our mom not to far from us as we jumped around in the water of the fire hydrant somebody opened on the corner.. How we laughed with the neighborhood kids.. It was so much fun. How my lil sis, cousin lilly and I used to fight over the cutest Menudo..lol I remember like it was yesterday.. Lilly loved Miguel.. Mary loved the first Ricky (not ricky martin) and I loved Rene..lol good times.. It seemed like yesterday that wearing banana clips and having jersey hair was so in... Coral orange lipstick with electric blue eyeliner was the shiiiiit.. Jelly shoes and pink pumas where a staple and here to stay...(dont act like you dont know what i am talking about). Madonna's Like a virgin record was out and we knew every word and Michael Jackson ruled the world.... Lets not forget that a bag a chips was .25 cents at the corner bodega..all we needed was 5 aluminum cans to have the $.05 refund to get to it..lol oh NYC.. thanks for the memories..
Then there was oh so sweet junior high school in Puerto Rico.. I went through so many musical fazes..hahaha.. I started with NKOTB (I still love them).. I was going to be a lawyer..hahaha didnt happen.. Then it was followed by my heavy metal time that one kind of stuck.. i still love the hair bands. My best friend (jason) in the whole wide world came into my life... Jason showed me the love of Aerosmith and classic southern rock.. Then it was the era of grundge where us boricua chicks that were into it swore we could get dreads.. dammit ma you never let me go there.. I can almost still hear her.. Gina peinate cono!!
I loved my childhood and eventhough it wasnt always easy it made me the woman I am today.. Soon I will blog some more but its not like anyone reads this shit.. I felt good writing it...

Wear Sunscreen

So in my new profile I had not blogged yet.. I find that so strange since having our formal wedding last october I just hadnt come around to it. So here it goes...
December was a pivotal time in my life I realized that I am 33 years old and really had not accomplished much other than having a beautiful daughter and a wonderful husband.. I know there is a song released in '99 from Baz Lurrhman tha is called wear sunscreen that kind of described what i was going through at the time..
I have learned so many things about my life, in such a short time.
Here they are,
*I have learned that not everybody in your inner circle of friends has your best interest at heart.
* Your best friend is seriously your mom... (mom you are my rock, my soul and I can never live my life without you)
* Your siblings become friends that love you when you are an adult.
* For some people it takes 2 times to get married to do it right. (My husband is the best guy I know.. other than my dad, nando and Jason.
* My daughter sometimes does know more than I do (shhhh dont tell her that)
* Its never to late to start over.
* Ex's are ex's for a reason.
*My nephew nandi lets me look at things through new fresh eyes and is one of the only people that can make me laugh from the heart. Yanuel and Jordan are the gorgeous little men that make me realize that I am getting older but its ok because they are growing old with me.
With all that being said I am happy to say that I am learning so much in my 2 nd part of my life and that I hope that I look at life with fresh eyes always and feel blessed in every day of my life...
